Weekly Meal Plan: October 11, 2026

Hello and happy Sunday!

This week's meal plan includes: Dijon chicken with roasted Brussels sprouts, fish taco bowls, hamburger stroganoff, broccoli cheddar potato soup and a kale salad, stuffed bell peppers, and pumpkin roll with cream cheese filling for dessert.

The Main Dish:

• Monday Main: Dijon Chicken - This Dijon chicken is going to be your new favorite weeknight banger with pan-fried chicken in a savory Dijon cream sauce.

• Tuesday Main: Fish Taco Bowl - Everything you love about fish tacos, but make it a bowl with cabbage slaw fully loaded with taco-seasoned flaky fish, rice, and creamy avocado!

• Wednesday Main: Hamburger Stroganoff - This quick comfort food dinner has all of the savory flavors you love from beef stroganoff but is a lot faster and easier to make.

• Thursday Main: Broccoli Cheddar Potato Soup -With a few healthier swaps, this broccoli potato cheese soup is still supremely creamy, cheesy, and ready in 30 minutes flat!

• Friday Main: Stuffed Bell Peppers - Bell peppers are large enough to hold a decent amount of filling while taking on a variety of flavors!

• Weekend Treat: Pumpkin Roll - This pumpkin roll inspired me fall in love with pumpkin-flavored everything and made me a firm believer that you can’t have too much pumpkin this time of year.

Mix & Match Sides:

• Side 1: Brussels Sprouts with Pancetta - Perfectly crispy and caramelized Brussels with sweet maple syrup, tangy balsamic vinegar, and crispy, salty pancetta.

• Side 2: Cilantro Lime Rice - This copycat Chipotle cilantro lime rice pairs amazing with the fish taco bowls!

• Side 3: Apple, Cranberry & Cheddar Kale Salad - A healthy and delicious massaged-kale salad with cranberries, sliced apples, sharp white cheddar cheese, and crunchy sunflower seeds!

• Side 4: Garlic Bread - Is there anything better than a dinner of soup, salad, and buttery garlic bread?!

🛒

We simplified your grocery list: Feel free to swap out the beef in the stuffed peppers with lighter options like chicken or turkey. Or use whatever you have on hand or what's on sale! Toss some more veggies into your fish taco bowl—bell pepper, onion, or green onion would all be yummy. I prefer medium cheddar for the soup, use sharp cheddar cheese if you prefer a stronger cheese flavor.

Hello! It's Tuesday feeling like a Monday! And that means plotting the plan for what to cook this week. Shrimp recipes are my weeknight secret weapon, and this bright and tangy chimichurri shrimp has quickly become a new favorite because it is so simple to make and so good to eat. Big, succulent shrimp are briefly marinated in an herbaceous chimichurri sauce before being cooked lightning fast in a skillet. The shrimp is packed with bright and tangy flavor and it takes almost no effort to...

Hello Christmas breakfast lovers! When we aren't traveling for the holidays, we make the same Christmas breakfast I've been eating since I was probably 5 or 6 years old. Simply put, it wouldn't be Christmas without our traditional breakfast menu on the Christmas china my mom gave us many moons ago. Here's what we have every year: This ham and cheese casserole that's assembled the day before so the creamy egg mixture soaks into the bread, then bake it after Santa arrives. While the casserole...
